Watermelon, ‘Feta’ & Seed Salad

This salad is exploding with summer goodness and makes the perfect accompaniment to any barbecue or picnic!

Ingredients

  • 450g watermelon, cut into (roughly) 1 inch chunks
  • 70g vegan feta (approx.), crumbled (we used Violife Greek White Block)
  • 8-12 black or Kalamata olives
  • ½ red onion, finely sliced into rings
  • 50-60g rocket or mixed leaves
  • 2 handfuls (approx. 10g) fresh mint leaves, finely chopped plus extra for decoration
  • 2 handfuls toasted mixed seeds (use a shop-bought toasted seed mix for speed)
  • ½ tbsp lemon juice
  • Drizzle extra virgin olive oil
  • Sprinkle salt and black pepper, to taste

Instructions

  1. Arrange all of the ingredients on a large serving plate in any way you fancy.
  2. Drizzle over some olive oil, the lemon juice and a sprinkling of salt and pepper.
