Ingredients
- 1 jar or tin of green Spanish olives
- 100ml of mild Spanish olive oil
- 1 tbsp of sesame seeds
- 1 lemon
- 3 sprigs of mint
- 3 sprigs of thyme
Instructions
1. Drain the olives from the brine and place them in a bowl with the olive oil. In a small pan, toast the sesame seeds over a high heat for one minute, stirring constantly. Add the hot seeds to the bowl. Rub the herbs between your hands and add them to the bowl.
2. Dress with the juice of the lemon (you can even use the zest – the most aromatic part). Leave to stand for 20 minutes then eat – or keep in the fridge in a tightly sealed container for up to two weeks.
Did you know that the Vegan Recipe Club is run by Viva!, and that we are a charity?
We create vital resources to help educate everyone – vegan veterans, novices and the v-curious alike – about vegan food, health and nutrition; as well as the plight of farmed animals and the devastating environmental impact of farming.
Through this work we have helped thousands of people discover veganism; but we want to reach millions more! We rely entirely on donations as we don’t get any government funding. If you already support us, thank you from the bottom of our hearts, you are really making a difference!
