Ready-made Vegan Macaroni Cheese
Again, not so much a recipe as product information for those of you exploring the new and wonderful world of vegan food! We offer three variants…
1. Ready-mades. At time of writing, Sainsbury’s Free From Macaroni Cheese Style, Waitrose, Tesco Wicked and Amy’s Kitchen are each truly ready-made, a vegan ping meal – but they each need to be served with a big plate of greens and/or salad to make them a balanced, healthy meal! (We estimate that there will be more such vegan ping meals on the shelves soon!)
2. Free & Easy Sauce Mix is very quick – cook some pasta and make the cheesy sauce mix from a tub (very simple) + a couple of extra ingredients.
3. The third version – Vegusto Cheese Sauce – needs cooked pasta too – but the sauce is instant, it just needs heating up.

Ingredients
Ready-made (eg Amy’s Kitchen or Sainsbury’s)
- 1 pack of ready-made vegan Mac & Cheese per person
- 1 portion of green or mixed vegetables – steamed or microwaved
- Mixed salad or tomato salad
Free & Easy Sauce Mix Version (GF, nut free)
- 1 portion of cooked pasta per person (macaroni or other short tubular pasta, eg penne) – use GF if appropriate
- 1 portion of sauce mix per person
- Plant milk and water to stir in
- 2-3 tbsp nutritional yeast flakes per portion (Engevita brand)
- 1-2 tsp Dijon or other mustard per person
- PInch or two of paprika per person
- Salt and black pepper to taste
- 1 portion of green or mixed vegetables – steamed or microwaved
- Mixed salad or tomato salad
Vegusto Cheese Sauce Version (GF, nut and soya free)
- 1 portion cooked pasta per person (macaroni or other short tubular pasta, eg penne) – use GF if appropriate
- 1 portion Vegusto ready-made vegan cheese sauce per person
- 1 portion of green or mixed vegetables – steamed or microwaved
- Mixed salad or tomato salad
- Salt and black pepper
Instructions
Amy’s Kitchen Version
1. Heat the mac cheese according to the packet instructions.
2. Steam or microwave the greens and make the salad.
3. Serve the mac cheese and veg hot. Serve with the salad on the side.
Free & Easy Sauce Mix Version (GF, nut free)
1. Put the pasta on to cook and also the vegetables.
2. Measure out the mix according to how many portions you’re making. Put in a saucepan and whisk in the liquid (soya or other plant milk).
3. Stir in the mustard and nutritional yeast flakes. Bring to the boil until it thickens. Taste and adjust seasoning – eg more yeast flakes, more mustard, salt, black pepper
4. Make the salad and set aside.
5. Drain the pasta, mix in the sauce and sprinkle with paprika and black pepper.
Vegusto Cheese Sauce Version
1. Put the pasta on to cook.
2. Steam or microwave the vegetables. Make the salad and set aside.
3. Heat the sauce in the microwave or in a small pan on top of the stove.
4. Drain the pasta, mix in the heated sauce and taste. Season if necessary.
Optional extras / notes
This can be made in single or multiple quantities easily
