Quick and Easy Lavender Biscuits
These biscuits are absolutely heavenly, especially when they’re fresh out the oven. I’d never had fresh lavender in biscuits but it works sooo well and tastes like summer. These vegan treats were baked by the lovely Mary when I stayed in Gypsy Rose (her gypsy caravan) in The Forest of Dean.

Ingredients
- 4oz vegan margarine or TREX vegetable fat
- 3oz caster sugar
- 5oz plain flour
- Small amount of plant-based milk OR small amount of orange juice and zest of ¼ orange (adding very gradually to get the right consistency)
- Drop of vanilla essence or ½ fresh vanilla pod (scraped out)
- 5 lavender flower heads (in bloom), finely chopped
Instructions
- Beat the margarine, vanilla and sugar until pale before adding the flour.
- Gradually add a very small amount of the plant-based milk OR orange zest and orange juice (a little bit at a time) until you form a stiff dough.
- Finally add in the lavender until evenly distributed.
- Roll into balls about the size of a walnut, place on baking sheet and into a preheated oven (180ºC) for about 10 mins till the buns are golden brown.
- Allow to cool a little before lifting off the baking tray.
