Pistachio Tahini Bites

When I discovered that health and indulgence could go hand-in-hand, there was no turning back! This recipe is a perfect example. Packed with 2mg of iron, 5g of protein and 5g of fibre per serving, they offer a satisfying boost of nutrients while delivering a luscious mix of creamy tahini, crunchy pistachios, and velvety dark chocolate.

Ingredients

  • 500g/3⅓ cups pitted Medjool dates
  • 160g/⅔ cup tahini
  • 30g/¼ cup pistachios
  • 120g/4.2 oz dark chocolate
  • ⅓ tsp sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Place the dates cut side down onto the paper and flatten with your fingers.
  3. Build an even layer resembling a square with no gaps.
  4. Spread the tahini evenly over the top of the dates.
  5. Sprinkle the chopped pistachios all over.
  6. Melt the chocolate in 10-second intervals in the microwave, stirring between times to ensure it doesn’t burn, and spread on top of the bark.
  7. Sprinkle the salt all over.
  8. Refrigerate for about one hour or until the chocolate has hardened.
  9. Cut the bark into equal size squares and enjoy!
