Ingredients

  • 300g/1¼ scant cup peanut butter (any variety)
  • 140g/⅔ scant cup vegan butter or spread (our favourite is the Naturli vegan block)
  • 150g/¾ cup sugar
  • 150g/½ scant cup syrup (eg maple, agave, fruit)
  • 2 tsp vanilla extract or paste
  • 250g/2 cups plain flour (use GF if necessary)

Instructions

  1. Preheat the oven to 160°C (fan)/325°F/Gas Mark 3.
  2. Line two baking trays with parchment.
  3. Get a large bowl and add all of the ingredients except for the flour. Cream them all together either with an electric whisk or manually.
  4. Fold in the flour and stir through until you get a dough like consistency. Add more flour if necessary to create a nice smooth dough.
  5. Using your (washed ;)) hands, create a smooth dough and shape into around 20 evenly sized balls.
  6. Place about 10 per baking tray and flatten them down with your hand until each ball is about 0.5cm thick. If you want a smoother edge then shape them with your hands.
  7. Bake in the oven for around 15 minutes or until lightly golden.
  8. Remove the tray from the oven and leave them to cool and firm up for 10-20 minutes before transferring.
