Maple Roasted Parsnips
There’s nothing better than crispy golden roasted parsnips – well apart from ones covered in maple syrup! This recipe is so easy to make and will transform a standard roast/Christmas dinner into something special.

Ingredients
- 500g/17.5 oz parsnips, peeled and cut into medium-sized strips
- 4 tbsp oil
- 3 tbsp maple syrup
- Sprinkling salt and pepper
Instructions
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Heat the oil in a roasting tin in the oven until it’s starting to smoke. Add the parsnips and toss quickly so that they are well coated.
- Pour the maple syrup over the parsnips, sprinkle with salt and pepper and place the tin back into the oven.
- Roast for 30-40 minutes, turning once, or until they are tender and golden.
