Hot Cross Energy Balls
These hot cross balls are a quick snack with all of the Easter flavours of hot cross buns. They can also easily be made gluten-free! You will need a piping bag for the icing (or just snip a little hole in the corner of a sandwich/freezer bag).

Ingredients
- 60g/2/3 cups porridge oats (use gluten-free if required)
- 60g/2/3 cups almond flour (or ground almonds)
- 6 dates
- 100g / 2/3 cups raisins
- 1tbsp coconut oil
- 1tsp orange zest
- 1tsp vanilla extract
- 1tsp ground cinnamon
Topping
- 4 tbsp icing sugar
Instructions
- Blast the porridge oats in the food processor until it resembles a fine crumb.
- Add the remaining ingredients and mix until it forms a sticky mixture.
- Remove the mixture and roll into balls and place in the fridge to set.
- For the topping, mix the icing sugar with a small amount of water so the icing is still firm but pliable. Add the icing mixture to a piping bag and pipe in crosses on the hot cross balls.
