Fresh Home-made Pasta

Making your own pasta isn’t as complicated or time-consuming as you’d expect. And the best thing is, that it tastes absolutely amazing! You can either use a pasta roller to make strips or roll them by hand using a rolling pin.

  • 1 cup plain flour or pasta flour
  • 1 cup durum wheat flour (also called yellow semolina flour)
  • Pinch of salt
  • 1 tbsp olive oil
  • 1 cup luke warm water
  • Vegan margarine and salt and pepper to serve

    1. In a large mixing bowl, combine the two flours and a pinch of salt. Make a well in the middle with a wooden spoon.

    2. Start to add in the water, but only into the well, mixing carefully, combining it gradually with flour using the spoon. A dough will start to form in the middle. 

    3. Once all the water is added, you’ll be ready to bring all the mix together as a dough in your hands, kneading it briefly. It should have an elastic consistency and shouldn’t be sticky.

    4. On a floured surface, cut the dough into 4 pieces. Working one piece at a time, either flour a rolling pin and roll out long strips of the dough to form pasta sheets, or follow step 5 if you have a pasta roller.

    5. If you have a pasta roller, put a piece of flattened dough through it, on it’s widest setting. Told it over a couple of times and repeat the process, before turning down its thickness ‘dial’ and feeding the pasta sheet through on a medium setting. Whether you are using a pasta roller, or rolling it by hand, each pasta sheet should be of an even medium thickness.

    6. As you make each sheet, flour it and either hang or lye it out to dry. Once you have 4 sheets, if you have a tagliatelle cutting attachment on your pasta roller, use this to divide up your strips.

    7. If cutting your pasta by hand, just cut each strip into ribbons about 4mm thick using a sharp knife. Hang up your pasta ribbons or tagliatelle to dry further as you go.

    8. When all your pasta is cut, boil a medium saucepan of lightly oiled and salted water. Add in all the pasta and cook rapidly for just a couple of minutes. It will cook very quickly, so be careful not to overdo it. Drain and serve with salt, pepper and vegan marg, or with any sauce you like. Homemade Pesto would be fantastic!
