Easy Raw Romesco Salsa
Romesco is a traditional Catalonian, nutty, tomato-based sauce. Enjoy with salads, courgette noodles, pitta, roasted or raw veg and anything else you fancy!

Ingredients
- 1 clove garlic, peeled and roughly chopped
- 1½ red pepper, cored and roughly chopped
- 1½ tbsp soy sauce (use tamari if GF)
- 8-10 sundried tomatoes
- 50g skinless almonds or ground almonds
- 3 tbsp olive oil
- ¾ tsp brown sugar or syrup (eg maple or agave)
- 1½ tbsp lemon juice
- Pinch salt (taste at the end and add more if necessary)
Instructions
- In a food processor or high powered blender, using the pulse function, blend the almonds gradually (if using whole) until chopped but not powdery.
- Add all of the other ingredients and blend until smooth.
