Easiest Energy Balls

The thing that everybody loves about these energy balls is that they are the easiest in the world to make! Full of healthy, protein-packed yumminess, they can be made in just five minutes. Enjoy them fresh throughout the week or freeze them for another time. Perfect post-workout, as a breakfast on the go or as a between-meals snack.

Ingredients

  • 1 cup of Brazil nuts
  • 1½ cups of raisins or dates, pitted
  • 1 cup of desiccated coconut plus extra for the coating
  • 2 tbsp vegan vanilla or chocolate protein powder (optional)
  • 1 tbsp raw cacao or cocoa powder (optional)
  • Pinch of salt (optional)

Note: if you don’t have measuring cups, use a large mug for this recipe as it doesn’t need to be precise.

Instructions

  1. Blend all the ingredients together using a high-speed blender or food processor.
  2. Form into small balls and then dip into a bowl of desiccated coconut to coat.
  3. Keep the energy balls in the fridge for up to 7 days in an airtight container or freeze them.
