Creamy Ginger Miso Dressing

A creamy, Oriental-style light miso and ginger-based dressing to lively up salads, grain dishes or steamed vegetables

This is delicious with a salad to accompany Chinese, Japanese or Thai style food – try it with lightly steamed mange tout & baby sweetcorn, raw thinly sliced red pepper and slivers of carrot.

Product information

  • Silken tofu is available from large branches of supermarkets (look for Mori-nu or Blue Dragon brands) as well as health food shops. Other brands – Taifun and Clearspring – are sold in health food shops.
  • Light miso (‘sweet’ or ‘pale’) is sold in large branches of Sainsbury or in health food shops. It is mellow and pale yellow in colour.

Ingredients

  • 110ml/4 oz silken tofu
  • 2 tbsp light miso
  • 1 tbsp rice vinegar or ½ tbsp cider vinegar
  • 1 tbsp spring onions, chopped 2 tsp ginger root, grated
  • 80ml/5 generous tbsp orange juice
  • 1 tsp soy sauce
  • 1 tsp brown sugar or agave syrup
  • 1 tsp sesame oil

Instructions

1. Combine all ingredients in a blender or food processor and purée until smooth. It will keep in a screw-top jar in fridge for about a week.
