Coronation ‘Chicken’ Sandwich

Ingredients
- 250g vegan chicken pieces (we used Vivera Plant Chicken Tenders and tore them up into bite-sized pieces. There are so many options out there in all the health food shops, supermarkets and online), lightly fried according to instruction (alternatively, use 2 x 400g tins chickpeas, drained and rinsed)
- 6 tbsp vegan mayo (eg Follow Your Heart, Hellmann’s, Plamil, Leon, Geo, Biona, supermarket own-brands)
- 1 tbsp mango chutney
- ¼ tsp ground cinnamon
- 1-2 tsp mild curry powder
- 1-2 tbsp raisins or sultanas
- 8 slices bread with vegan butter/spread (our favourite is Naturli)
Instructions
- Lightly fry the chicken pieces according to the packet then leave to cool for 10 minutes.
- Stir all the other ingredients together in a bowl (apart from the bread!) and add the chicken once it’s ready. If using chickpeas then mash them up a bit before adding to the dressing.
- Divide the filling evenly between 4 sandwiches and serve or enjoy in your lunchbox.
