Ingredients
- Half a small white cabbage, grated on the large holes or finely chopped
- 2 very large carrots, peeled and grated
- 2 spring onions chopped small or 1 tbsp finely chopped red onion
- 175g/6oz egg-free mayonnaise (for a less fatty mayo, use half and replace the other half with soya or rice milk. Mix in well).
- Salt and black pepper
- You can also make your own mayo – it’s cheaper and lower in fat
Instructions
1. Mix all of the ingredients together in a large bowl. Add more mayonnaise if necessary.
2. Store in the fridge covered and eat within a few days.
