Caramelised Onion Yellow Rice with Lentils

Ingredients
Rice and lentils
- 5 tbsp olive oil
- 4 tsp dried thyme
- 4 tsp mixed herbs
- 1 tsp ground black pepper
- 1 tsp ground turmeric
- 300g/1½ cups brown lentils
- 1500ml/6 cups vegan stock or water
- 185g/1 cup uncooked basmati rice
- 2 tsp salt
Caramelised onions
- 3 large onions sliced
- 125ml/½ cup vegetable oil
Instructions
Rice and lentils
- Using a large saucepan (that has a lid), heat the olive oil on a medium heat. Stir through the herbs and spices and sauté for 2-5 minutes.
- Add the lentils and vegan stock. Put the lid on the saucepan and cook the lentils for 10 to 15 minutes.
- Stir in the uncooked rice and salt, place the lid on again and simmer for 15 minutes or until the rice is cooked.
Caramelised onions
- Using a large frying pan, heat the oil for a couple of minutes on a medium heat.
- Add the onions and fry for 15 minutes or until golden brown, stirring frequently.
Assembly
- Once the rice is cooked and the onions are golden brown, transfer the rice and lentils to a serving bowl and top with the caramelised onion.
