Bean Burger Supermarket Supper

Bean burgers are sold by just every supermarket including the budget chains like Aldi and they are nearly always vegan.This is a simple, fling it together supper from ready-made or ready-prepped products. Most of them are spicy and with Mexican spices but there are other types now, including the Indian lentil version from Sainsbury’s.

GF option? Amy’s Kitchen brand carries some in its range. Try Holland & Barrett or Ocado. Alternatively, try Goodlife brand or Georgia’s Choice Mexican Bake from Morrison’s

(Like most things, home-made are nicest and also very cheap to make so if you have 20 minutes to spare make our delicious and easy beanburger recipe instead!)

Ingredients

  • Ready-made bean or other vegetable-based veggie burgers that are vegan, eg spicy beanburgers (all supermarkets) or other combos.
  • Wholemeal bread buns or other bread rolls of choice
  • Salad, mixed
  • Burger fixings: eg avocado, sliced tomato, lettuce leaves, alfalfa or other fine sprouts, sliced onion
  • Burger condiments: eg chutney, pickle, vegan mayo, mustard of any kind, tomato ketchup, bbq sauce etc
  • Optional: ready-baked potatoes or potato wedges

Instructions

  1. If using baked potato or wedge option, pre-heat the oven now then bake them according to the packet directions.
  2. In a frying pan or similar, add a little oil, heat it up and lightly fry the burgers both sides, according to the packet instructions. Keep warm.
  3. Make the salad.
  4. Assemble the burger buns. Smear condiments of your choice on the bread and add the salad on one half of the bun.
  5. Add the hot burger and close the burger sandwich firmly. Place on a plate with the salad.
  6. Serve with the baked potato or wedges if using. Eat while hot.
