Baked Potato with assorted fillings, Convenience-style
This is another idea for using ‘accidentally vegan’ products to make a quick meal. Obviously, it’s easy to bake a potato from scratch but this is for those of you who are too busy to cook – for this meal at least!
Time factors
- Microwaved. This is fastest but also depends on your microwave’s power.
- Oven. This takes longest.
- How many potatoes are being cooked – this applies particularly to microwaved potatoes.
McCain’s and Bannister’s Farm are the most common brands and you should find these nearly everywhere.

Ingredients
1 large baked potato per person
Filling ingredients…some ideas to choose from:
- Baked beans
- Vegan Veggie Chilli (eg from a tin or home-made leftovers)
- Vegan Veggie Curry (as above)
- Dhal (as above)
- Hummus
- Garlic mushrooms – roughly chopped up, fried in a little oil, crushed garlic or garlic paste cooked quickly plus a drizzle of soya sauce
- Pasta sauce heated through with chopped flavoured tofu, eg Taifun rosso, smoked or basil
- Stir-fry vegetables and tofu (freshly made or heated up leftovers)
- Vegan cream cheese, eg Sheese, Tesco, Sainsburys, Violife or Tofutti
- Vegan hard cheese, eg Sheese, Tesco, Vbites, Vegusto, Violife
- Vegan butter, eg Pure, Biona, Suma etc
Plus
- 1 large salad including dark green leaves, eg watercress, avocado, walnut and tomato
Instructions
- Reheat the baked potato – microwave it or bake it in the oven, according to the packet instructions.
- Reheat your filling and make the salad and dressing.
- Cut each potato in half lengthways. Top with filling(s) of your choice. Serve with the dressed salad.
