You will find these ingredients in a good healthfood shop. Otherwise Ocado, Realfoods or Goodness Direct and such businesses will do the trick.

Ingredients

  • 1 cup cashew nuts
  • 2 tablespoons coconut sugar
  • 2 tablespoons coconut oil (eg Biona)
  • 2 tablespoons carob syrup or carob molasses
  • ½ teaspoon almond essence
  • ½ cup quinoa flakes
  • ½ cup ground almonds

Instructions

  1. Preheat your oven to 180C°/350°/Gas Mark 4. Line a baking tray with baking parchment/greaseproof paper.
  2. In the chopper attachment of a hand blender or in a food processor grind the cashew nuts until they are breadcrumbs.
  3. Add the rest of the ingredients and blend again.
  4. Divide the mixture into 12.
  5. Roll into balls and flatten slightly.
  6. Place on a baking tray, bake for 15 minutes until the edges have darkened.
  7. Cool for ten minutes.
