Ingredients
- 1 cup cashew nuts
- 2 tablespoons coconut sugar
- 2 tablespoons coconut oil (eg Biona)
- 2 tablespoons carob syrup or carob molasses
- ½ teaspoon almond essence
- ½ cup quinoa flakes
- ½ cup ground almonds
Instructions
- Preheat your oven to 180C°/350°/Gas Mark 4. Line a baking tray with baking parchment/greaseproof paper.
- In the chopper attachment of a hand blender or in a food processor grind the cashew nuts until they are breadcrumbs.
- Add the rest of the ingredients and blend again.
- Divide the mixture into 12.
- Roll into balls and flatten slightly.
- Place on a baking tray, bake for 15 minutes until the edges have darkened.
- Cool for ten minutes.
