Air Fryer Rich Chocolate Almond Brownies

Ingredients

Wet ingredients

  • 45g vegan butter
  • 175ml plant milk
  • 100g vegan dark chocolate, broken up
  • 3 tbsp almond butter
  • 2 tsp vanilla extract

Dry ingredients

  • 100g caster sugar
  • 50g ground almonds
  • 50g plain flour
  • 30g cacao powder
  • 1 tsp baking powder
  • 100g dark chocolate chips (plus some extra to put on top)

 

Instructions

  1. Preheat your air fryer to 165°C/330°F.
  2. Line the base and sides of a medium baking tray.

Wet ingredients

  1. Firstly, melt the butter on a low heat in a saucepan, then add the plant milk.
  2. Turn off the heat and add the almond butter and chocolate chunks.
  3. Allow to melt slowly and stir gently to combine.
  4. Now add the vanilla extract.

Dry ingredients

  1. Add all the dry ingredients to a large bowl, mix to combine.
  2. Transfer the wet mix into the dry, fold to combine. Now stir through the chocolate chips.

Assembly/cooking 

  1. Spoon the mixture evenly into the lined baking tray. Press into the sides.
  2. Sprinkle the additional chocolate chips over the top.
  3. Bake for approximately 20 minutes, then remove and allow to cool for at least an hour to cool and set.
  4. Slice and store in an airtight container for up to 4 days.
