Ever wondered what a week of vegan food looks like for us at Viva!’s Vegan Recipe Club? Our social media coordinator, Pia, is lifting the lid on her foodie-habits and offering some fabulous tips to make every day filled with delicious plant-based delights!

 

Breakfasts

Granola with Oat Milk

It is very easy to make your own granola at home and often turns out much cheaper than a store-bought version. But even the ones from the shops can be super versatile, as you can add any of your favourite fruits, nuts and seeds to make your dream breakfast. This is my go-to breakfast of choice for most days!

Healthy (& very tasty) Vegan Pancakes

These pancakes are full of protein and a great way to use up any leftover grains from lunch the previous day. My favourite toppings are coconut yoghurt and fresh blueberries. Fancy a savoury version? Simply omit the syrup and cinnamon from the recipe and top with your favourite savoury items!

Gregg’s vegan Bacon and Sausage Bap with Brown Sauce

Some days, I like to go out and grab a little treat breakfast. Fortunately, there’s a Gregg’s bakery on my way to the office! Since they expanded their menu with more vegan items their vegan bacon and sausage bap has become my end of the week breakfast treat.

Scrambled Tofu with Avocado and Sriracha on Sourdough Bread

My favourite start to the weekend a plate of this! I season the scrambled tofu with  black salt (kala namak) to make it taste ‘eggy’. It is true bliss served on a slice of sourdough and topped with avocado slices before adding some sriracha drizzle.

Lunches

Wholemeal Wrap with Vegan Chicken Pieces, Spinach, and Hummus

One of my standard lunches, especially when I’m on the move or short of time, is a wrap with hummus. I always try to go wholemeal and add lots of veggies for added fibre. Top tip: stuff them with whatever is left in the fridge from the night before, such as cooked grains and leftover chilli or curry!

Cous-Cous with Mixed Vegetables

My Tuesdays are usually full of meetings, so I opt for light lunches without compromising on taste! My favourite is a bowl of cous-cous with steamed vegetables like cauliflower, carrots, and courgette, mixed with cucumber, tomatoes, olives and a drizzle of lemon juice – just the right meal to get me fuelled for the afternoon. This meal is inspired by our Vegan Recipe Club’s cauliflower tabbouleh recipe.

Domoda (Gambian Peanut Stew)

Creating food and cookery content for our Vegan Recipe Club social media accounts, I spend most of the day in the kitchen on Wednesdays. I therefore tend to eat any meal that is in the spotlight that day. Today, we had the creamiest stew – make sure you check out the video  for a step-by-step cooking demonstration!

Lidl’s Chef Select Tomato & Basil Soup

Another quick, cheap (£0.85) and accidentally vegan meal is Lidl’s Chef Select Tomato & Basil Soup. I really like the lovely fruity taste, especially in combination with a crusty roll. Top tip: add sliced avocado and mixed seeds on top to pack an extra omega punch.

Seitan Roast with all the Trimmings (including vegan Yorkshire Puddings)

This is sadly not a weekly occasion, but when time allows I love to cook a turkey-less roast with stuffing and crispy ‘skin’. Served with some roasted vegetables, potatoes and yorkshire puddings! Top tip: use Ella’s Instant Vegan Yorky Pud Mix for a no-sweat option in a whopping eight different flavours!

Dinners

Spicy Coconut Noodles

Mondays can be really busy in the Viva! office, so it is nice to cook up something easy for dinner. Our Vegan Recipe Club’s spicy coconut noodles only take 25 minutes to make and will fill your kitchen with the most fragrant and mouth-watering scents.

Quick & Healthy Vegan Mac ‘n’ Cheese

Mac and cheese always has always had a special place in my heart and I was over the moon when I found out that I could create a cheesy sauce from blended vegetables and nutritional yeast. I always follow the fool-proof recipe on our Vegan Recipe Club webpage and use it for bakes, jacked potatoes and as a luscious topping for nachos.

Falafel in Wholemeal Pitta with Hummus and Salad

It is an effortless, convenience-style dinner that can be completely assembled with store-bought items. There are some fab plant-based options in supermarkets nowadays you can pick up on the go. Cauldron Falafels are widely available across the UK and most shops will have a good own brand selection for hummus and pitta bread. Need some inspiration? Pizza Twister

This is a true fri-yay meal. It is extremely fun to make (get the kids involved!) and even more fun to eat! It is another very versatile recipe as fillings can be swapped with whatever you fancy. Mine always includes lots of mushrooms, red onion, chopped black olives and fresh basil. Naturally, it is a Vegan Recipe Club recipe!

Coronation Chick-un Sandwich

Using up left-overs of the vegan Sunday roast, I often whip up a coronation-style sandwich for dinner. It only takes a few simple swaps to veganise. Simply mix some vegan mayo with a spoon full of mango chutney, some cinnamon, curry powder and a handful of raisins before adding the vegan chicken (or turkey). Voila!
