Madeira Cake from a Packet

We used the vegan-friendly verson from Sainsbury - it works surprisingly well with vegan additions!

Madeira cake is what you call pound cake; perhaps there are supermarket packet mixes that are vegan?

1 pack of Sainsbury's Madeira Cake mix
75g vegan margarine - soften in the microwave for just a few seconds. Pure, Biona, Vitalite, Suma and Sainsbury Free-From spread are all vegan
1 tsp baking powder
160ml soya milk
1 tbsp flax meal mixed with 2 tbsp water*

Plus a strip of greaseproof paper/baking parchment to line the base of the disposable loaf tin supplied

*Larger branches of Sainsbury sell Virginia Harvest Cold-milled Flax Seed. Otherwise buy ordinary flax (linseeds) and grind them up fine in a coffee or nut grinder.


1. Follow the packet instructions by pre-heating the oven to180C/350F/Gas Mark 4. Assemble the disposable loaf tin and line the base with a piece of greaseproof paper. Mix the flax meal with the water and set aside. Place everything in a mixing bowl and whisk on medium speed for two minutes with an electric cake mixer. If the mix is too stiff, add 1-2 tbsp soya milk and whisk in well.

2. Bake according to the packet instructions - 35-40 minutes at the original temperature, then reduce to 150C/300F/Gas Mark 3 for 10 minutes. Remove cake from oven. Allow it to cool well before tipping out on to a cooling rack - use a palette knife or other knife to ease the sides away from the tin. Carefully remove the strip of paper from the base. Allow it to cool more on the rack before eating/storing in an air-tight tin.
