Good Mood Hummus

Ingredients: 

1 tin chickpeas, drained
1 clove garlic
1 tsp tahini paste
1 tbsp lemon juice
2 tbsp flax seed oil
Salt and pepper to taste
2 tbsp pumpkin seeds

Method: 

1. Blend all of the ingredients (apart from the pumpkin seeds) together in a food processor or in a bowl using a hand blender

 2. Add in a splash of water if you prefer a thinner hummus.

3. Lightly toast the pumpkin seeds under a grill or in a small dry frying pan (just for a minute, as they brown quickly).
