Easy Seitan

Seitan - or gluten - is the original meat alternative. This tasty dish originated in China hundreds if not thousands of years ago as a food for vegetarian Buddhist monks. It has since percolated round the Far East, eg Japan and Vietnam and is used in contemporary Western veggie and vegan food.

High in protein, low in fat, and dense in texture, it lends itself to all sorts of dishes, including stir fries, 'steaks', deli slices for sandwiches, meat balls/chunks and more.

Quick Lentil & Tomato Dahl for Caterers

The recipe uses storecupboard ingredients - serve on its own with a little rice and salad for a simple, satisfying lunch or as part of a curry meal.
 

Options:
cooked diced potatoes cooked in with the dahl a couple of minutes before serving
baby spinach leaves cooked in for a minute or two.

Tofu Burgers for Caterers

These nice burgers are a doddle to make and freeze well, so it's worth making a big batch. Use a burger press if you have one as it helps them to keep their shape. And just squidge back together with a fish slice if they go a little crumbly!

Deluxe Vegan Cheeze & Broccoli Quiche

An amazing vegan quiche recipe made using vegan cream cheeze, eg Sheese, Tesco or Tofutti.

Pastry: we give you two options
- a home-made mashed potato crust which is tasty, quick and easy - it doesn't need blind baking (short pre-cooking) rolling. However, it doesn't keep well and the quiche needs to be eaten there and then.
- ready-made shortcrust version. Jus Rol, Sainsbury and Tesco ranges are mostly vegan (bar those made with butter!) - just check the labels. 

 

Oven-roasted Tofu Mediterranean for Caterers

An aromatic and delicious recipe. If you don't use tofu because it's an unfamiliar ingredient or you are concerned that it's tasteless, this should persuade you! It would work best with a couple of other accompaniments - some are suggested below.

Aubergine, Tomato & Chickpea Stew with Quinoa Pilaf for Caterers

A classic with a bit of a twist - the Quinoa Pilaf is simple but very good, although it goes well with brown rice, as pictured below. We also include more several serving suggestions to enhance the recipe's flavours and presentation. The stew is even nicer if made the day before.

 

Olive, 'Chorizo' and Tomato Pasta for Caterers

This recipe for Olive, Chorizo and Tomato Pasta has become a favourite to serve at Viva!'s Incredible Veggie Roadshows and can be eaten hot or cold. 

Moroccan Chickpea Stew for Caterers

This lovely fragrant stew can be jazzed up with different accompaniments, such as hummus; baba ganoush; harissa paste; tabouleh salad or quinoa pilaf. It's cheap to make and ticks many boxes: low-fat, wheat-free, nut and soya-free etc.

Thai Vegetable Curry for Caterers

Delicious, Fresh-tasting Red or Green Thai Vegetable Curry with Tofu

This lovely curry is a winner. Simply ensure that the curry paste you buy is vegan - that it contains no shrimp or fish sauce.
